Dany De Smet, a 38-year-old brewing engineer and beer lover was born and
now lives in Melle, near Ghent (East-Flanders, Belgium). He
finished brewing school in 1992 to become a brewing engineer.
In 1992 he started working as brewing master at the Huyghe Brewery
(known for Delirium Tremens, Pink Elephants Beer). Since 1996
he's been working as a hygiene specialist for the brewing
industry. Also, since 1995, he's been teaching brewing science (Brewing
Technology and Quality Control) at Ghent Brewing High School.
He participated in
founding the local beer tasting organization BLES from Zottegem.

| Slaapmutske Tripel is a golden-blond beer of top-fermentation with
refermentation in the bottle. Colored barley malt is used to brew this
pale beer. The fresh aroma and spicy taste are due to the use of two
very aromatic hop varieties. The mouth feeling is malty and ends with a
full-flavored bitter aftertaste. |

| Slaapmutske Bruin is a full-malt beer with top-fermentation and refermentation in the bottle. The beautiful, deep-red color is obtained
using a combination of different color malts. By using colored malts
together with aromatic hops and some coriander we create a full, light,
sweet beer with a full-flavored, spicy aftertaste. The head is compact
and creamy and covers the light sparkling beer. |

| Slaapmutske Blond is a full-malt top-fermentation beer with
refermentation in the bottle. The soft and tender taste is obtained
using malts from barley and wheat. The spicy "nose" is due to the use
of very fine American, aromatic hop varieties. Slaapmutske Blond has a
very pleasing full-malt taste and a round mouth feeling. The aftertaste
is tender and light bitter. |
