  Williams Bros Brewing Co.  ★  Scotland Ales

Williams Bros Brewing Co. Scotland Ales 1986 AD, Scotland In Glasgow's homebrew shop a Gaelic-speaking Islander translated an old recipe for "Leann fraoich" (Heather Ale) to Bruce Williams, the shop owner.  He began the crusade to revive Scotland's brewing heritage by trying different varieties and quantities of heather flowers, making up batches and testing them on his customers.  Once the formula was perfected he began to sell the brew as Fraoch (Heather) Ale.  ~2000 AD, Scotland Heather Ale is now produced at the New Alloa Brewery at Kelliebank, Alloa, along with four other traditional Scottish ales.

Fraoch has a distinctive floral aroma, full malt character and a dry wine-like finish.  As one of the oldest styles of ales in the world there are many legends and folklore surrounding it.  Heather Ale is made using an old recipe.  Into the boiling bree of malted barley, sweet gale and flowering heather are added, then after cooling slightly the hot ale is poured into a vat of freash heather flowers where it infuses for an hour before being fermented in copper turns.  Complements to Fraoch: Salmon and other seafood, roast chicken and turkey, cheese, rich and spicy foods.

Prior to the 1850's there were many Scottish coastal ale-houses which brewed their own ales, these ales were made from local malted barley which was grown on fields fertilised with seaweed.  This environment gave the barley a very specific flavour which we have recreated by the inclusion of fresh seaweed in the mash tun.  In addition to the seaweed (bladder rack) harvested on the Argyll coast we have used only organically grown malt.  The darker malts roasted by ourselves.  Kelpie is a rich chocolate ale which has an aroma of fresh sea breeze and a distinctive malty texture.  The name Kelpie is the term for mythical creatures one of which lives in each loch of Scotland.  The best known kelpie is the Loch Ness Monster.  The symbol on the label is a Pictish symbol of a kelpie.  Complements to Kelpie: Perfect with seafood and sushi.

Grozet: The gooseberry is the Scottish native "hairy grape" and has been used to produce alcoholic beverages at least since Medieval times.  In the 17th century monks were known to make a strong wine-like ale from unmalted wheat, herbs and gooseberries.  This contemporary version is brewed with lager malt, wheat, bog myrtle, hops and meadowsweet, then secondary fermented with ripe Scottish gooseberries.  Due to the high proportion of wheat and the high pectin content of gooseberries, Grozet is likely to "haze" once chilled.  These proteins could be removed by chemical or physical processing but this would effect the flavors and "feel" of the drink.  Complements to Grozet: Grozet compliments a variety of light foods, pastas and salads.

Alba a spruce and pine ale, from Bruce Williams the brewer of Heather Ale, is a unique beer with a surprising flavor.  It is a tawny brown strong ale, 7.5% ABV, with spruce aroma, rich malt texture, complex wood flavor and a very lingering finish.  Spruce and pine ales were introduced to Scotland by the Vikings and were very popular in the Scottish Highlands until the end of the 19th century.  Many early explorers, including Captain Cook, used spruce ale during long sea voyages since it prevented scurvy and ill health.  Shetland spruce ale was said to “stimulate animal instincts” and give you twins.  Alba is brewed to a traditional Highland recipe from Scots pine and spruce shoots picked during early spring.  This is Bruce Williams’ third unique beer made only from ingredients indigenous to Scotland.

Ebulum, an Elderberry Black Ale is a rich black ale with fruit aroma, silky soft texture, a soft roasted flavor and a gentle finish.  This brew uses elderberries picked in Scotland from late September through October.  The elder tree and and its berries are steeped in mythology.  Welsh Celtic druids considered the elder tree to have mystical properties.  There are many elderberry wine and ale recipes, but the most common ale was Ebulum which was reputed to have been a black, strong ale tasting richly of roasted grain and wine.  Williams Bros Brewing Co. has re-created this ale by brewing from roasted barley, oats and wheat boiled with herbs then fermented with ripe elderberries.  Complements to Ebulum: Drink with baked and stewed foods. Drink lightly chilled from a straight glass.
