We usually do not make compromises, but this is probably the exception. Norwegians are dead scared of dark beers. This is an attempt to show that there are gentle dark ales. As such Havre Stout is smooth and drinkable. We think Havre Stout is good both with and in food. Try pairing it with a red meat dish, or give your vanilla ice cream a small dash before serving.

this beer is "Peculiar Christmas" in English. This spiced
Christmas ale is strange - and indeed a fusion beer. We have
gathered inspiration from the Norwegian drink “gløgg”, and as such
this is quite an uncompromising brew. Best served with “goro”
and “fattigmann.”

on higher temperatures....

our driest and most acidic, but still has low bitterness. Aromas and
flavors are of crisp green herbs, lemon soda and white yoghurt. This
sake referments in the bottle producing some carbonation and should be
carefully opened after standing still for some time. Medium high umami.

Yamahai Genshu Muroka Shiboritate Nama

"Moto," also known as "Shubo" is the yeast starter in the Sake brewing
process. It is a mixture of koji and water and provides an extremely
rich environment for yeast cells. It's one of the first of many
painstaking steps in the difficult process of sake brewing. The Toji
decided to make a batch of Sake entirely composed of this "Mother of
Sake" to bring to the forefront all the splendid Yamahai flavors and
aromas and to give the enthusiast a chance to taste the heart of the
Sake. Yellow flowers, cedar wood, citrus, rhubarb and apple are
prominent in the nose. Concentrated umami, a very high but mellow
acidity, and a lingering kire (Sake Tail) are balanced in the flavor
profile.

brewing make this a very delicate and elegant sake. Well balanced
acidity and sweetness, gentle herb notes, and a velvety texture produce
great moments in your mouth.
Food pairing: This sake is a great choice to pair with sashimi; highly
recommended are fresh white fish sashimi with salt, fresh scallops,
grilled sea bream and pistachio nut flavored green salad. Should be
