Brasserie de Silenrieux - Belgian Beers Belgian Beer "Sara"

Brasserie de Silenrieux is a very small brewery, founded by Eric Bedoret on his parent's farm in the Ardennes (Wallonia). He recreates old lost styles of beer, using locally grown special grains and a typical Belgium top fermenting "abbey" strain of yeast is used, most likely quite similar to that employed in numerous Belgium strong ale breweries, including La Chouffe, La Binchoise and possibly La Caracole. The brewery has also a small bar restaurant built in the same barn. While the brewery is quite modern, there is no bottling line. A set of manual bottle fillers are used for the champagne bottles, and labels are applied to the bottles the old-fashioned homebrew way -- with milk.
