Brasserie de Silenrieux is a very small brewery, founded by Eric Bedoret
on his parent's farm in the Ardennes (Wallonia). He recreates old lost styles
of beer, using locally grown special grains and a typical Belgium top fermenting
"abbey" strain of yeast is used, most likely quite similar to that employed
in numerous Belgium strong ale breweries, including La Chouffe, La Binchoise
and possibly La Caracole. The brewery has also a small bar restaurant built
in the same barn. While the brewery is quite modern, there is no bottling
line. A set of manual bottle fillers are used for the champagne bottles,
and labels are applied to the bottles the old-fashioned homebrew way -- with
milk.

The European controlling organization ECOCERT has awarded the ORGANIC certificate to Sara Buckwheat beer. "Sarasin" is French for Buckwheat, that's why the brewer named this beer Sara. Sara is brewed from BUCKWHEAT, Sara has a dark red-brown color, is well hopped, and spicy at the same time. Food
combinations: Easy drinking beer, goes with meat-dishes and with
fish-dishes, or just for a pleasant refreshing drink with crackers
in the evening.

Sara Buckwheat is also known as "black grain", and is a very round small ball-shaped grain, black on the outside but white inside. It is an easy growing simple grain, very rich in starches.
Sara has a dark red-brown color, is well hopped and spicy at the same time. It has a hearty exclusive special refreshing taste. Sara is refermented in the bottle and can be aged for a few years.
Open a bottle of Sara over dinner, be it vegetarian, meat or fish,
you will be pleased.
JOSEPH is a real Wheat-beer. It is brewed from SPELT. Spelt is a very old member of the wheat family. New interests in health-food are reviving the demand for Spelt. The fruity, slightly acid taste of a real Wheat-beer is here present, and it is enriched by an exclusive taste and aroma, that you don't find in any other Wheat-beer. The color is yellow, and cloudy, because of the nature of the beer (Wheat, unfiltered) and the refermentation
in the Champagne bottle. It is a very light and refreshing
beer, 100% natural, brewed along the finest artisanal Belgian
traditions. Maybe the only spelt-beer in the world. Roll
the bottle before opening!
